A Spring Recipe

Rachel’s Spinach Gnudi

As the hills turn green and the first blooms of spring stretch toward the sun, our kitchens begin to reflect the season’s lightness and renewal. This month, we’re excited to share a fresh and vibrant recipe from our table: Homemade Spinach Gnudi—pillowy soft ricotta dumplings gently flavored with spring greens and finished with a simple butter sauce or a sprinkle of Parmigiano-Reggiano.

What is Gnudi?

Pronounced "nu-dee"—Italian for “naked”—gnudi are essentially ravioli without the pasta. They’re made with fresh ricotta cheese, spinach, and just enough flour to hold their shape, resulting in a dumpling that’s incredibly tender and flavorful. Think of them as the elegant, lighter cousin to gnocchi. Light, delicate, and deeply satisfying, this dish is a celebration of the new season. It’s the kind of meal that invites you to linger, to savor, and to raise a glass of Chardonnay in good company. Find Rachel’s recipe card below, along with our pairing suggestion.

The Inspiration

Inspired by rustic Tuscan cooking and the bright produce coming into season, this recipe honors simplicity and texture. Spinach adds a touch of earthiness, while creamy ricotta makes each bite feel like a small indulgence. We love plating them with a swirl of sage butter and then garnishing them with fresh herbs or edible blossoms for a bit of spring magic.

The Pairing

We love this dish with our 2022 Quartz Acorn Vineyard Chardonnay. This golden-hued wine offers concentrated notes of ripe nectarines, guava, and limoncello. Its satisfying acidity is matched with a rounded mouthfeel and lingering salinity, making it a perfect complement to the creamy texture of the gnudi. The wine's refreshing character enhances the dish's flavors, creating a harmonious springtime pairing. Discover this wine here.
