The Inspiration

Rachel's recipe is a tribute to the comforting flavors of winter, featuring tender quail, a creamy cauliflower and parsnip purée, and a medley of roasted root vegetables. The quail is spatchcocked for even cooking and enhanced with a herbaceous marinade that highlights the savory essence of the season. The root vegetables—sweet carrots, and vibrant golden beets—are roasted to perfection, adding a natural sweetness to the plate.

Recently featured in Wine Spectator's Top 100 Wines of 2024, our 2022 Dundee Hills Incline Pinot Noir is a great expression of the Jory soils of Dundee Hills. Showcasing balance and depth with bright red fruit, hints of spice, and a silky texture, it perfectly complements the quail’s delicate flavor profile.
